Cookery school & Souk

The Silk Road Cookery School & Souk, Irelands first Middle Eastern and Mediterranean Cookery School, is located in Kimmage, Dublin 12.

From our Souk we sell Middle Eastern ingredients, pottery, freshly ground coffee, plants and vegetable.

In our Cookery School we teach a wide variety of classes and can cater for people looking for gluten free, vegan or vegetarian classes. All classes are hands-on and no experience is required to participate. You can check out our class schedule below - from where you can also buy and book your place.

Abraham Phelan has more than 40 years of experience in cooking Middle Eastern and Mediterranean food and he has had several restaurants in Greece and Ireland. All of our classes are taught in our Cookery School in Unit 12, K.C.R., Industrial Estate, Kimmage, Dublin 12.

26/1 2021 Vegetarian Palestinian "Brunch"

One of the best things about weekends is that they lend themselves to long, lazy brunches. Give the Irish fry, American pancakes or French toast a break and learn how to make your own Palestinian brunch from scratch including Falafel (chickpea fritters), Shakshuka (fried eggs with sumac), hummus, garlic potatoes, bread and mint tea.

23/2 2021 Moroccan tagine

Moroccan tagine dishes are slow-cooked savoury stews, typically made with meat, poultry, or fish together with vegetables, fruit, spices, nuts, and dried fruits. In this class you will learn how to make a chicken, lamb or vegetarian tagine served with couscous and a Moroccan salad.

2/3 2021 The world of hummus

You can flavor hummus with just about anything you want. In this class you will be taught the basic recipe for hummus and how you can transform that into beetroot-, spinach-, roasted pepper-, mint-, and pomegranate hummus. You will also be taught how to make Manakeesh-bil-za'atar - a homemade flatbread topped with an Arabic herb mix (Zaatar) and olive oil.


30/3 2021 M'sakan & Pomegranate Salad

M’sakhan is a favourite Palestinian dish for informal family gatherings, which originates from the Tul-Karem and Jinin areas north of Bethlehem. The key ingredient is Palestinian sumac.  You will be taught how to make M’sakhan, also known as Palestinian chicken, with red onions, sumac, nutmeg and serve flat bread and a Pomegranate salad. If you are vegan or vegetarian you will be taught how to make a Seitan M'sakan.

27/4 2021 Greek Mousakka

In this class we are returning to the wonderful food from Greece. You will be taught how to make a Greek lamb mousakka and a vegan & vegetarian mousakka with lentil, courgette, potatoes and roasted peppers. Both will be served with a Greek salad.

11/5 2021 Mezze

In this class you will learn how to make homemade rice stuffed vine leaves, aubergine & courgette baba ghanoush and fatayer (parcels with spinach and tofu).


25/5 2021 All things Kofta

Kofta pil tahini and kofta pil patata are two dishes where kofta in the main ingredient. Kofta means meatballs, however you will be taught how to make both our Vegan seitan mixture and our lamb mixture for Kofta. Then we will show you different ways of creating dishes using the basic Kofta recipe.
